Neapolitan and Doria are the origin of French cuisine in Japan! The great Sally Weil

It was on August 23 a while ago. I went to Yokohama with my wife to listen to the concert of the orchestra which I belonged to before. The concert started in the afternoon and the doors opened earlier than usual, so we decided to have lunch at 11 o’clock.

Why did you choose this place?

それは、このホテルが[highlight]「シーフードドリアとナポリタン」の発祥の地[/highlight]だからです。

一ヶ月ほど前、ファミレスで何気なくシーフードドリアを頼んだ時、妻と「これってきっとイタリア含むヨーロッパにはない料理だよね?」という話になり、その場で検索して調べてみたところ、この横浜のホテルニューグランドで生まれた料理、つまり日本が発祥であることがわかりました。

このホテルのサイトによると、シーフードドリアは、このホテルの初代料理長「サリー・ワイル」さんが、体調を崩した外国人客のために、 何か喉の通りの良いものをと考案した料理だとのこと。そしてナポリタンは、2代目料理長「入江茂忠」さんが考案したものなのだとか。

So we decided to go to Yokohama on August 23, since we had a chance to visit there.

Another reason.

実はこのドリアの事実を知る前に、[highlight]ナポリタン[/highlight]もここが発祥という話を聞いたことがあり、このナポリタンについてもいつかここで食べてみたいなあとずっと思っていました。しかし一方で、ドリアやナポリタン目的わざわざ行くのもなんだか時間がもったいないなあと思っていたのも事実。ということで、ずっと行く機会を逃していたんです。

In spite of this, why did my desire to go suddenly increase at the right time to listen to this concert? In fact, there was a further reason for that.

それは、かつて僕がこの日に聴きに行くオーケストラに所属していた時、あるこのオケの熱狂的なファンが、[highlight]「演奏会に行く前にホテルニューグランドでナポリタンを食べる予定だ。ここはナポリタン発祥の地。日曜日が楽しみだ」[/highlight]と、2chに書き込みをしたのを見かけたんです。

It was very popular, and there was a time when the ticket could not be obtained if it did not receive it in the lottery though the ticket was put on the general sale though this orchestra was an amateur. Therefore, there was a thing that the rare ticket was put on the market in Yahoo Japan etc. and the high price was given, and it was occasionally pointed out that it was not a problem from inside and outside of the orchestra.

At the time, I was running the orchestra, so I was also looking at 2ch as part of my monitoring of the reputation and opinions from the outside. That’s when I found the post by the fan I mentioned earlier.

なんだか、この書き込みが、とてもほのぼのとしてずっと強く印象に残っていました。そして今回、シーフードドリアを調べたきっかけで、このことを再び思い出したというわけです。

It might be interesting to go to this Hotel New Grand when I go to the concert of the orchestra which I don’t belong to now. I thought so and decided to visit.

And finally, the day of the event. We arrived at the site at about 10:40. I really wanted to make a reservation for about 11:00 in advance, but I couldn’t get it. It seems that the number of reservation slots is limited. However, there were not many customers at this time, so we were able to enter safely. And we ordered Seafood Doria and Neapolitan without hesitation. Here it is!

「シーフードドリア」

It was a very orthodox looking doria, but it was still delicious with a good white sauce. I think the seafood was also fresh, not frozen.

「ナポリタン」

This one also looks orthodox, but the taste was very different from the Neapolitan I had imagined so far. I could feel the strong taste of firm and fresh tomatoes. I’m not a big fan of Neapolitans, but this flavor makes me want to eat as many as I can.

さて、話は少し戻りまして、このシーフードドリアを発案した初代料理長のサリー・ワイルさん、色々と調べていくと、[highlight]日本のフレンチ料理の礎づくりにも、大変貢献された偉大な方[/highlight]だったことがわかりました。

After World War II, Sally Weil returned to Europe and worked hard to train his students in Europe. After returning to Japan, many of the chefs who had gone to Japan for training and developed their skills established French restaurants one after another, which triggered the French food boom in Japan.

The Western food and French food that we eat everyday is an important cultural asset that we inherited from our ancestors. It is wonderful.
